In my experience, people will buy the lowest-priced item, whatever the price is. So you're really just cutting your own throat by "undercutting" by 50-60%. Sure, people will buy your stuff because it's 20g cheaper than the next guy's stuff ... but they'd also buy it if it was only 1g cheaper. I'll take that extra 19g, please.
I gave up on mining on my main because saronite ore had been selling quite well for a long time on my server at 20-25g/stack, and then a couple people started selling immense quantities of the stuff for 12-13g/stack - less or only slightly more money than they could have made by simply smelting the ore and vendoring the bars. Stack of 20 bars vendors for 25g; 20 bars takes 40 ore, so 12-13g/stack of ore = 24-26g for 40. And that's before the AH cut. Completely ruined the market.

this is true for makable items, but if you have a random drop epic( ilevel200, or from leveling mobs) and you want to liquidate it, its a lot more effective to undercut massively if you want to sell it fast. you could repost it for weeks on end slowly going down by 1g apiece, but for old gear i find it better to sell low and fast.

I had the epic boe sword drop in Occ doing a daily 2 weeks back. (The rest of the group rolled d/e, no idea why, but I won on a greed roll.) On my server, that's 650-700 of sword.
I put up with re-listing it three times, and collected my 700g. I'm sure I could have sold it faster at 400g, but I'd rather have the 300g than an empty slot in a bank.
