You can definitely use the default UI to heal raids. I've had a while in the beginning of my Wotlk raiding when all my add-ons were unable to run on my computer for some reason, and I could heal Lord Marrowgar by dragging all 25 health frames from the raid pannel (in the socail tab) onto my screen, and click to heal as I do when I have grid. In fact, I only use grid (now replaced with VuhDo for prettier colors) so I don't have to drag all the frames, and I still click to target and click to cast spells, and i've been able to heal up to sindragosa so far. (scroll button is awesome as a keybind, of course other healers don't use it because they don't target players)
Of course I could start using VuhDo's keybinds instead of only use it for targetting, but I don't play often enough to remember what spell is shift+right click, and my guild and I are fine with the way I heal at the moment, which is really all that matters.
