"Why can't I create a worgen in the beta?"
Worgen creation is disabled for a little bit while Blizzard changes up the starting area. We also hear Blizzard's doing a lot with the models. This is normal beta behavior for Blizzard; it won't be that way at release.

"Do you know if the revamped old world has quest completion achievements by zone as is implemented in Outland and Northrend. I would be much more likely to work on the new loremaster achievement, whatever it may be called, if I could clear out zones one-by-one and move onto the next. The current system of quests per continent is a sick joke, IMO."
Blizzard hasn't really revamped the achievements yet, so there's no way to know what's on the plate. The developers have expressed their own dislike of old-world questing achievements before, and I would suspect that this is on their list of things to change. The new level 80 to 85 Eastern Kingdom and Kalimdor zones have the BC/Wrath-style questing achievements, though, so that's a relief, at least (although they don't work properly at the moment and probably won't until release, if Wrath is any indication).
And for anyone contemplating working on the old-world quests right now or any loremaster achievements, I highly recommend -- nay, insist -- that you use EveryQuest or something like it. Just do it; it'll save you possibly hundreds of hours.

"How many skill points in a crafting profession do you need to learn the lowest recipe from Cataclysm? Do I need to max out my enchanting to 450/450 to learn the new recipes?"
Rhabella answered you in the comments the exact same way I would:
The new (but not top-tier) recipes will kick in at 425 then, or whatever the the magic cut off point is. That way you don't have to grind out insane amount of "old world' mats to hit 450, like you would have to now.The current system is set up where you can learn the new level at 25 skill points before you max. I would expect something similar where you can train for the next level at 425.

I've heard they don't stack; however, I can't test this myself, unfortunately. Either way, it won't be that big of a deal -- at best (or worst, depending on how you look at it), everyone is on an equal

Very doubtful. MMOs are never truly finished; they are an ever-changing world that encourages dynamic content every step of the way. Even EverQuest, which was released in March 1999, is still getting updates. With 11.5 million people playing WoW, Blizzard will have ample reason to continue to update this game for a very long time. I know that it has long-terms plans (or at least general ideas) for Azeroth and WoW, just like any other multi-national multi-billion dollar corporation would have plans.

I asked this in another thread (and thx for the replies to those who did), but is there a list of exactly what reps are going away, and which achievements will become feats of strength when Cata drops? I've heard Keymaster is becoming a f.o.s, so I wanted to know which reps/achvs. I should focus on between now and launch.

The thing is, people keep asking this over and over and it's an impossible question to answer--the truth is, we just don't KNOW, yet. Blizzard hasn't done anything with old world achievements yet in the Beta. There is no "list". The only thing we know for sure is that Loremaster isn't going away, the numbers are just changing and it'll probably be harder (a Blue stated this recently).
Honestly, if you're really that worried about them, just do as many as you can before Cataclysm. You've still got months.

Hmm. If I had to venture a guess, I'd say that Blizzard hasn't really revamped the achievements yet, so there's no way to know what's on the plate.

They have stated in the past that they are going to work very hard to avoid changing "Insane in the Membrane." This means that Steamwheedle Cartel, Bloodsail Buccaneers, Shen'dralar, Darkmoon Faire, and Ravenholdt should be unchanged by Cataclysm.
That statement was made a good amount of time ago, but there's been no announcement otherwise since that point.
As others have stated, we won't know until it changes on the Beta, and achievements are probably not at the top of priority for updates currently.

The way I read/interpreted it from the blue posts is that any achievement you have in progress will be lost if incomplete once cata rolls out. So this means if you have one continent done for loremaster you should be ok because that in itself is done. But let's say you have a few to go...that would be wiped out because they are resetting all the quests. There might be a few exceptions. Hope that gives you some clarity.

With Loremaster/questing it's not that they're resetting the quests; it's that the 'new' loremaster achievement is going to be looking at all the new quests, while the current loremaster is looking at all the current quests, and there are likely very few (if any) quests on both lists.
You can expect to keep your progress in Outlands and Northrend, though, because Blizz has stated that those areas are going to be mostly unchanged, with all the storyline weirdness that results for new characters who just spent sixty levels dealing with the aftermath of those events.

This occurred to me last night (apologize if it's been asked before): If you have a mid level character parked somewhere. What is going to happen to all the quests in your quest log once Cata hits, since the quests will most probably have been switched out? If they, let's say wipe your quest log, will they then somehow help introduce you to the new cataclysmic events?

Any old quests (not Outland or Northrend) will probably be removed. If not, you won't be able to complete them or turn them in (this is the case with some people that still have removed quests in their logs).
Hopefully, there will still be quest givers in the major cities that will point you to a zone or quest chain that is appropriate for your level, like Warcaller Gorlach (http://www.wowhead.com/npc=10880).

If the past is any indication, the quest will remain in your logs until you delete it. I have a older character that has one of the herb turn in quests for the AQ gate event, something that is long gone....

So, In Vash'jir, you are able to walk on the sea floor, are able to breathe water, and get a water mount. My question is, will there be anything similar for any of the other water heavy zones? The zone in particular I am thinking of is the new Thousand Needles.

Unlikely. The buff exists because all the content is underwater, not just that the zone contains a lot of water.

So far, there is only the Seahorse mount that everyone will get. It's from a quest that is part of the main chain of Vashj'ir.

I wish people would stop throwing that "11.5 million people" thing around. There may be 11.5 million accounts, but how many of them are still active? I think we'd all be surprised (or interested) to see how many ACTIVE people are playing.

I believe that 11.5 million covers all accounts in current good standing (ie, those who are available to login).
