This was just over a week ago, last I checked, so it's apparently still in the pipe. We haven't heard about any delays or cancellations.

Well, there aren't really any new cities, per se, but no, none of the cities have flight limitations at this point. You'll be using a ground mount if you don't have a flying mount available, and other than that, it's just a matter of personal taste. Interestingly, all of the current 80+ instances in the Cataclysm beta allow ground mounts to be used.

Nearly every low-level dungeon has been changed in some way. It ranges from boss changes (Deadmines, Shadowfang Keep, Stockades, Stratholme) to new quests (Dire Maul, Scholomance, Scarlet Monastery) to level changes (a whole bunch of them).
The newest change I've seen is a certain infamous gnoll being the end boss of Stormwind Stockades. Other changes include some scheming elementals within Dire Maul, new events in Scarlet Monastery, and replacements for Rivendare and Dathrohan in Stratholme.

Very likely none. All of the new zones are reachable from Stormwind or Orgrimmar, and with a flying mount, you can get to the portal area from the center of town in seconds.

Helix Gearbreaker (a goblin rogue), Glubtok (an ogre), and Admiral Ripsnarl (a worgen) are the figures that Vanessa Van Cleef recruits for the new Defias Brotherhood. It's likely that they'll be the new bosses in the instance, with Vanessa as the final boss.

I was never really THAT fascinated by Hogger, but the fact that Blizzard actually made him a boss makes my heart a bit warm and fuzzy.

I agree, I think it was a very nifty move on Blizzard's part. Hogger's gained such a weird sort of legendary status, there was no way they could have left him out. Giving him boss status is awesome.
Now, we can only hope for Heroic Stockades in the next expansion, where we can face a level 100 Hogger, with 666K HP. ^_^

Heroic Stockades?
Defeating Hogger on Stockade level will require two 40 man raid, of level 85s. It'll be the Kil'jaeden of Cataclysm, after Deathwing, the illidan of cataclysm is defeated. We'll be able to only bore him until he goes away. Unless the horde brings Deathbringer Saurfang's corpse. Don't bring Overlord Saurfang, or else you'll end up in a zone called Southern Plaguelands.

What race do you play?
The Hogger mystique comes from fresh humans trying to do the quest. Usually its their first Elite/Group quest and they try to solo it. They clear out a small area of mobs around him, pull him, go full out, and then Hogger smacks them to the ground in 1-2 hits.
Also, it seems that Hogger has always been unusually strong at his level (11) even for an elite mob. While he can be soloed by most people at level 14 he can prove difficult for some classes until level 15.
Hogger is also one of the very few elite mobs from release to retain his elite status. So, getting killed by him, and subsequently having to group up to defeat him (which many players didn't have to do until this point) is sometimes seen as a right of passage.
