I seem to remember, quite some time ago, someone from Blizzard talked about changes to make fishing more interactive. Have they talked about what those changes might be, and have any changes appeared in beta yet?
There have been no changes to fishing yet in the beta. That doesn't mean they won't come, there's still time for Blizzard to add stuff in. Hopefully it won't go the way of the dance studios.

Actually yes, just yesterday. Blizzard came out and said it likely will nerf Northrend XP like it did Outland XP.

Blizzard has said many times it's on track for a 2010 release date. I would fully expect it to make this deadline and look forward to playing in Cataclysm in a few months. Remember that Blizzard doesn't need to test endgame content, nor does it need to have everything implemented in the beta. It's perfectly acceptable for there to be things like gear and professions not implemented until release. Blizzard doesn't really owe us anything in terms of testing content. As long as it does a good job at its own internal quality assurance, things will be good, whatever happens.

The PTR is an open beta, but I doubt the company will ever do a truly open beta of one of its major releases. There's no way it can handle 11.5 million people playing on a beta server. There just is no technological choice but to restrict the beta to closed/selected status.
* Just kidding about the totems, just had to participate in the communal totem griping.

This is just my guess, but knowing the way that these things work, it will probably not get updated. That would defeat the purpose of goldsinks a little- if the thing that you bought was always the best thing ever, why buy another one?
It also won't be useless. Its still a free vendor whenever you want it, which is especially nice if the instances will allow mounts like something I heard elsewhere on WoW.com. And a big, shiny vanity item and a fully functioning passenger mount.

The repair bot from TBC was updated for WotLK poisons and reagents, so I'd imagine that something that cost so much would be updated with new items - as well as removing the ammo and other outdated items.

I'm willing to bet they will update the vendors on the mammoth, but also come out with a flying mount version (with extra seats and vendor)

I'm willing to bet the new heirloom items for 85 will be chest and shoulder slots. I doubt Blizzard will allow us to stack +XP that high.

MMO-Champion has screenshots of new heirlooms available from guild rep vendors. While some things (like price, rep requirement) will probably change, I wouldn't expect the items themselves to change much. Like Fenik said, there's helmet and cloak options for must specs/classes, the helm is a 10% XP increase, the cloaks are 5% increase and require levels "1-85". So presumably once you acquire the new items you could have a 35% XP increase from 1-80, then maintain a 15% increase from 81-85.

The new heirlooms do work 1-85. 10% from Chest, Shoulders, and Helm and 5% from Cloak. Plus an extra 5% if you can get the ring from the Kalu'ak Fishing Derby, it looks like it will technically be possible to hit 40% from heirlooms until level 80, when it would drop to 15%.

I can see lots of people begging for a guild if the new 'looms are only available through the guild vendor. Kind of puts pressure on GM's having to deal with that and also forces solo people to join a guild just for this one benefit...Not sure if I like that much. Hopefully the easy way is to just have the current heirloom vendor sell them too.
Though I do wonder that if the only way to get them would be to be in a guild, would solo guilds (ie. banker guilds) count as well as long as the toon is played, thus earning the guild xp? I would assume as much...that may be the easy way around it.
