Simple solution upon entering a instance right after the loading screen you're presented a slider to adjust your gear level according to the instance type and level of it. Say you're running some guildies through DM for but rather run it like the old days. You're in for sake of arguement 245 gear atm as you don't have time to raid everything but you're more of a guild helper. Running them through right now is just a matter of hitting one or two keys per run. So you scale it your gear back to mid-20's level just for a little ease but not standard mid-teen gearing.
Every piece of gear is already tagged with a item level so the slider can go up or down and stagger each piece of gear back a percentage. Basically it's the same from running a regular version to a heroic, they just have the percentages hardcoded into each instances database entries. But this way you'll have some form of interaction with it.
And yes I did this as I finally got around to getting my DK tank that sat for 8 months idle as I took a hiatus. Wanted my corsairs shirt finally so decided to blow through DM on it. Only hit blood boil and DnD the whole time through to clear it.
