Get the addon Lil' Sparky's Workshop, and make sure you have auctioneer or auctionator. That addon will tell you the potential profitability of crafted items. If you have a miner and herbalist, you already have the raw mats. Use the addon to tell you which are the most profitable crafted things (and also use your head... a lot of times there are crappy elixirs that are potentially 900% profit but that's based on listed prices, which no one will buy).

I have personally made quite a lot of gold selling tailoring spellthreads and spellweave (my tailor is spellfire specialized). It just so happens that is the market where very few people are posting auctions on my realm. This is versus JC, alch, and inscription, where you will see dozens of auctions for anything they can make most of the itme.
