It's not that there's great money to be made, it's that there's enough money to be made. As long as it's more profitable than some equally hard-to-setup scheme, WoW gold will be sold. For the farms that are already up and running, it's enough that it's more profitable to continue than to change their market.
Just think of email spam. You'd think no one would buy meds from some unknown source selling god knows what in a bottle/box that claims to be that medicine, yet people do and it's enough that very few do for the spammer to break even. It's the same with the WoW gold sellers. They might not need that many customers to break even.
