I would rule out gear farming or any type of equipment-related stuff. Go for achievements and stockpile some gold. There are plenty of achievements out there, both raid and not, and you know that gold sinks will be around in full force in the next expansion. Gear will be replaced. If you really wanted to gather something, go gather Khorium. Tons of goblins and worgen are going to want to build flying machines.

Nope. That's why my server has been running Ulduar and Icecrown drakes like mad -- free 310 flying for all of your mounts come Cataclysm! The 10-man Ulduar achievements are really fun and kind of easy these days, so throw together a pickup group, bang out some achievements and save 5k gold.

Wait if you haev a 310 flying mount ALL your mounts go to 310? Or just that one till you do the 5k?

When you acquire a 310 mount, all of your mounts are converted to 310.
Alternately, you can pay the 5,000g for that to happen instantly.

Yes the 280 mounts stay at 280. All go to 310 if you have one that is. And all can be summoned anywhere and act as the fast ground mounts if it is somewhere you can't fly.
Old world flying will cost you. You don't have to buy a 280 mount to get it nor a 310.

To clear things up about the riding skill costs / mount speeds in Cataclysm:
Apprentice (75 skill)
Requirements: level 20
Costs:4g, minus faction discounts
Does: You can buy and use regular land mounts. All your land mounts will move at +60% speed.
Journeyman (150 skill)
Requirements: level 40 + Apprentice skill
Costs: 50g, minus faction discounts
Does: You can buy and use epic land mounts. All your land mounts (regular and epic) will now move at +100% speed.
Expert (225 skill)
Requirements: level 60 + Journeyman skill
Costs: 250g, minus faction discounts
Does: You can buy and use regular flying mounts in Outland. Has no effect on land mounts. Your flying mounts will move at +60% on the ground and +150% in the air.
Artisan (300 skill)
Requirements: level 60 + Expert skill
Costs: 5000g, minus faction discounts
Does: You can buy and use epic flying mounts in Outland. Has no effect on land mounts. All your flying mounts (regular and epic) will now move at +100% on the ground and +280% in the air.
Master (375 skill)
Requirements: level 80 + Artisan skill
Costs: 5000g, minus faction discounts. If you’re rewarded a +310% mount by completing some achievement, you get this skill automatically and for free.
Does: Has no effect on land mounts. All your flying mounts (regular and epic) will now move at +100% on the ground and +310% in the air.
Note: without Cold Weather Flying and/or the Flightmaster’s License you’ll still be restricted to flying in Outland only.
Cold Weather Flying
Requirements: level 77 + journeyman skill or better
Costs: 1000g, minus faction discounts.
Does: Has no effect on land mounts. Allows you to use all your flying mounts in Northrend
Heirloom option: Level 80 characters (or higher) can buy a heirloom (account-bound) Tome of Cold Weather Flight, which can be used by characters from level 68 or higher.
Flightmaster’s License
Requirements: level 80 + journeyman skill or better
Costs: 250g, minus faction discounts
Does: has no effect on land mounts. Allows you to use all your flying mounts in Kalimdor, the Eastern Kingdoms and in Deepholm.
Note: seems to be not working in Blood Elf and Draenei starter zones on the beta. Will probably change?
TL:DR
All your mounts will scale in Cataclysm. You can buy +310% or get it for free by earning an achievement.

This once was true; and it was kinda nice to just summon up my gryphon, ride it to Krasus's Landing and just jump into the air.
However, a week or two ago they fixed this so if you can't fly somewhere you can't summon a flyer there, either.
For what it's worth, it looks like the free flight speed training is tied to the achievement, not the mount per se. Which leaves characters copied to the various test servers without 310 speed at all, even if they have their (on live) 310 mount; as they remind us every time the test servers go up, achievements don't get copied.

And just an FYI it's only 4k if you are exalted with the faction you are purchasing it from, just got it for my Paladin on Beta last night for 4k and he's exalted with Orgrimar.

Do we know whether the achievements that award a 310% mount - including those listed above AND Long Strange Trip, and possibly others - will still be around in Cataclysm (and still award the fast mount)?
The difference between 280% and 310% isn't really all that much. So if the achievements WILL still be there, there won't be much point in blowing 5,000 gold, rather than just planning on eventually completing one of the achievements.

Your list there is a little out of date.
Cold Weather Flying has been dropped to level 68, and costs 500g. Tome of Cold Weather Flying no longer exists.

ALL of your mounts will scale to their highest possible speed in Cataclysm. Now you can ride around on your old slow mounts and still keep up with your friends :D

Omg i know i shouldn't post my previous post while at work, busy. As Drakkenfyre and Wulf point out, it's not entirely correct (and neither is WoWWiki, which i used as a source of my info).
Northrend Flying requires level 68 and expert skill. There's no heirloom option anymore. I can't verify if the price is still 1000g or 500g
Flightmaster's Licence requires level 60 and expert skill.
