As an addendum, just because there are statues of trolls, elves, and tauren in Titan buildings does not mean that those races are Titan constructs. A museum of antiquities will have mummies, but that doesn't mean the curators are Egyptian.

The statues could basically be the equivalent of a museum exhibition displaying the creatures who were already there when the Titans arrived.
