Too many memorable moments to think of, but one of my favorites was during BC and progressing through Sunwell (thought all the 25 man raids in BC rocked). Being one of the tanks for Brutallus before you had Sunwell gear was one of the biggest adrenaline rushes for me in WoW. Here's this massive Pit Lord and he's beating the crap out of your decked out toon like its nothin.
I remember many a wipe when he'd chain crush me or the other tank and kill us before any healer could get a heal off...and I was armor capped, had 50% dodge (not factoring the sunwell debuff) and 28k hp buffed. Finally killing him for the first time was epic from a tank stand point because I could say to myself "YA! I just took the biggest beating of my life and now you're dead fool!."
