It's because while those little things add depth and fun to the game, they're also a lot of work. It takes as much work to make a class specific quest as it does to make a general quest. The difference is the class specific quest will only be seen by 1/10th the game (yes, people play alts, but this is an approximation). As cool as all those class quests are, once the game released and they finished up the ones that they were still working on, they felt their resources were better spent on quests everyone would see, which is pretty practical. And now that they're overhauling Azeroth, tossing them all and replacing them with a couple of general quests is a lot more time effective than revamping all the separate class quests.
