I just thought the Headless Horseman was trying to rhyme constantly--nothing fancy, just rhyming.
I mean, could you IMAGINE trying to do a haiku or a poem on the spot every time you wanted to say something?

Hey! a poem does not need to slant,
Nor does it need to match every beat.
And to rhyme every line is not required...
Though it helps to have a certain link.
In fact
Freeform and wheelbarrows and plums
all dance
in
a little line to say
poems can be made
anyway
But my favorite is still the villanelle,
though sadly I cannot write it here.
for the thing is bloody long and hard as hell
when trying to pull a forum post in poem out the rear.
