So if I already have Loremaster, do I automatically get the new Old World zone achievements grandfathered in? Or is it possible that I'll have Loremaster, but not actually the Burning Steppes or Winterspring achievements, just as example?

And any sign of a new pet collecting achievement, say for 100 pets?

It does depend on what zones you've done. You may be missing some, you may not. You won't be grandfathered in, for example, for a zone you've done no quests in (I know that's not really possible for loremaster, but for example.) A zone that didn't have many quests in Classic (say, Azshara) and is now pretty much a Horde zone may be dicey- Alliance may basically autocomplete it, and Horde may have to go do a bunch of quests.
