I've leveled cooking to max on seven of my eight 80's the old fashioned way. Last year was the first time I benefited from the Pilgrim holiday, and as an altaholic, I was grateful for the opportunity to save a bit of time. Truth be told, maxing out cooking isn't really that hard or time consuming.

Fishing is a different story, and I've only been able to get max fishing on 5 toons. It's just long, tedious and mind numbingly boring to level. Yes, I know fishing skill isn't really a big deal now, but for a lot of people, it's the principle of getting to max level, and when you have to do it for the umpteenth time, it starts to wear on you.
