The store software is probably hard coded to require a set amount of product. As in, it won't let you put up something for sale unless you tell it how much of it you have. So, they just put in the maximum amount and then go back in to "restock it" whenever it gets low.

@EdymnionThe webstore I work for has a checkbox for "infinite quantity". So, not necessarily true.
