It's the worst kind of monotonous task. You cant effectively do anything while you're doing it unless you count chatting while having to click every few seconds, and since it's got a lot of point, click, and wait random amounts of time, it's not like the other soul-crushingly boring grinds in the game that can be completely done with your foot on the mouse button while you're facing away from the computer.

I too have Salty and am working on my Turtle, but you have to admit, it can get boring at times. The bigger issue is that leveling fishing is rather pointless. You can fish up all the fish that matter at skill level 1 from pools. The only thing fishing does is increase your catch rate in open water fishing, which is very inefficient. Here's hoping they eventually make the fishing skill act as fishing haste or something like that.

I agree that fishing is mind-numbingly boring, but why not do like me and use its boring nature to your advantage? Do you ever have a hard time sleeping? I sure as hell do. When that happens, I login with my laptop and start fishing. Pretty soon I'm ready to sleep and my inventory's full of fish. It's win/win! (And no, I'm actually not joking. This is how I leveled fishing and got the fishing achievements.)

@Basil It depends on the person. I like fishing because it's pretty much a meditative activity and lets me slow down and just stop thinking for a while. It has value in that.
