I was a late starter to Wrath so I am still rep grinding Argent Crusdae and Kirin Tor. In Cata when running Cata dungeons will those tabards work or do I have to continue to run Wrath dungeons?

The tabards need you to kill someone that grants reputation before it can convert it. I'd guess that at 85 you'll still get reputation for Lich King dungeons, so you could still plug away at it. I'm only guessing still, but using a tabard to convert Cataclysm rep to Lich King rep will probably won't work. Only some faction rep is valid for conversion.

you won't really NEED rep with either of those two factions in Cataclysm: better versions of the head and shoulder enchants offered by them are available from the new Cataclysm factions. If you really do want Argent Crusade rep, however, a lot of quests in Eastern Plaguelands give Argent Crusade rep

Lithiumx:The Argent Crusade has a lot of quests and a few dailies to get you rep (Zul'Drak, Icecrown). The Kirin Tor don't have as many quests (Borean Tundra, maybe Dragonblight?) and I think just the cooking & fishing dailies.

My pally is grinding Argent Crusade rep and Tournament quests to get the Argent Charger. I'm just going to keep him in Icecrown for the time being and see how much experience he can accrue through the dailies. :P

After you do the Kirin Tor questline in Dragonblight, a daily opens up at Wyrmrest Temple called "Defending Wyrmrest" or something like that. There's an achievement for it and everything.

@Kenmoe: The Dalaran jewelcrafting daily also grants Kirin Tor rep.For Wyrmrest Accord, there's also a pair of dailies in Coldarra in BT once you've quested a bit there, the second one opening up at level 80 and located high in the area around the Nexus. Those of us who ran Malygos back at launch when it was end game have..."fond" memories of that daily ("Aces High", it was meant to be training for the last phase of the Maly fight).
