Interact with target keybind gets you past players atop NPCs

To set this keybind, bring up World of Warcraft's main Options menu (hitting Escape will bring it up), go to the Key Bindings menu, scroll down to Targeting Functions, and you should be able to find the option easily. You can also set an Interact With Mouseover key bind if you so choose. If you've never customized your key bindings before, be careful about the key you choose to bind to these functions. You don't want to overwrite other crucial keybinds accidentally.
Once your Interact With Target key is set, you no longer need to worry about crowds or mammoths. Just /target who you want to interact with and hit the appropriate key. It will bring up the dialogue prompt, and you're set.

If you don't know the name of the npc you want, shift+v will bring up their nameplate and you can click on that to target them.

Also, you can simply right clic on the nameplate to interact with it. I've been doing this for ages now.

This is also VERY helpful for those quests where you have to right-click a fast-moving critter. Just /target it, and then get close and hit your "Interact with Target" keybind.

^ This. Flight masters being swapped with mammoths and NPC's buried under a sea of players is soooo last week :-P The above tip is very useful though. Them critters is small 'n fast!

That is the only way I do that stupid crab cooking daily in SW. And the "Save the Wee Creature" quest in Hyjal.

This is also VERY helpful if you have trouble catching those tiny bunnies and squirrels at Mount Hyjal. Of course, I don't see why the place is on fire when those dryads could just start tossing snowballs around.

You can also click on the ? or ! if they are a quest giver to interact with the NPC.

I saw this hint pop up in the capital Trade Channel. It's made things much easier. I tend to save my key assignments for things that I need to use during combat. Interacting usually is a much more relaxing, mouse worthy affair.
