For all you or someone you happen to know (yes, it is very realistic to assume it's happened already to a reasonable amount of people so far), you or they may well have already sold or even just simply not selected upgrades from the few quests that DO help a lot because of the desire to rack up gold.
To have an 'out of sight, out of mind' mentality to get to your next quest so you could hit 85 that more quickly can be very unhealthy in the long run.
I'm not saying get a spreadsheet while leveling. I'm not saying you *have* to research quest rewards and whatnot. I *certainly* am not saying to shell out everything you have in advance and just have it waiting for you when you hit 85. After all, something better may come along along the way, right?
I'm just saying that if you don't really pay any attention whatsoever to the journey, chances are that when you hit your destination, you'll need to backtrack and that's no fun if you don't already have other reasons to do so (professions, helping guildmates level, scouting out beautiful scenery, etc).
