I think it's because she was undead to begin with, that's why it destroyed the three Valkyr.
Think about it, we only see Valkyr raising people who have just recently died, the first death... my brightest example, your roflstomp target and mine, Ingvar the Plunderer.
The Valkyr was there the minute you killed Ingvar, and brought him back to life, if bringing an already dead Vykrul back to life doesn't kill you, why didn't she just keep resurrecting Ingvar?
"He failed again" you might say, true... but he's already damned, and nothing in the Valkyr's speach leads you to believe that if he died the second time hes done for, in fact she says "Arise, and carry out the master's will!" if rezing people doesn't affect them at all, why didn't he just keep "arising" until the five are dead?
You might go to the Death Knight Starting zone, but there the wording kinda comes again, "It is not yet your time!" leads me to believe you are on the verge of death, but with some dark magic and your fit as a decaying fiddle can be.
And as for Sylvanas as a whole... she is doing what is best for her people, a lot of people love to quote outside books as cannon, well let me quote the newest Brady Games WoW strategy guide.
"Take up your arms, learn well, and prepare to defend not only your new homeland, but your very right to exist."
Sylvanas want's what is only best for her people, a people that if nature, the alliance, some of the horde, and heck, besides the argent crusade, EVERYTHING believes should not exist at all.
Yes she goes the path of least resistance, but everyone does that, why don't we get up in arms when:
SPOILERS!
Garrosh orders his airborne gaurd to attack the alliance navy with nary a warning, destroying them all, when all the alliance wanted was to help with the fight against the Twilight Cult. Where is the difference between that and the plague?

Also, you forgot to mention that the alliance broke the truce in Andorhall, and most of them being farmers forming a militia. I dunno but it looks like the Forsaken only blight bomb people they have to and people that piss them off.

One last thing I forgot to mention, for all that is in me, I hope that Sylvanas is being controlled by something, and it can be broken, not that I don't agree with rezing people who are dead, we gotta keep going somehow, unless one day a mommy and daddy forsaken get together and figure out how to have a little undead-ling that can grow up, we got a very short future to go with our very short past.
But to get back on topic, I hope she can be redeemed, so many people in wow are just thrown under the train, we need a redemption story... even the Ebon Blade aren't really 'redeemed' they just want to kill the Litch King. Now that its over, they needed a new purpose.

But seriously, WoW is full of redemption stories, far too many for my tastes. Hell, you have an entire race of "redeemed" Blood Elves. Myself, I prefer the darker side of the Horde.
