That is completely what I wondered and then thought about no exp gains for skinning. Although it is indeed a gathering profession it is much much easier to get leather than it is to get herbs or ore while leveling.

Actually it depends heavily on the zones and quests you do. While leveling up to 85 I got to kill very few skinnable things and thus ended up with a very low leatherworking skill at 85. (Even taking into consideration that maxing out professions takes much longer now)
I don't want exp for skinning though, and I'm alright with the other gatherers getting them, because they usually have to either stop repeatedly to pick up additional flowers/ores, or go back at some point or another to bring their skill up to par (though in the new old world the herb/ore spawns seem to be better adjusted to the new leveling speed).
What I'd like to see though would be exp for crafting. That was one of the things I really liked about Aion, that not only gathering, but also crafting granted some serious exp. I love to take time for professions while leveling. Everyone of my chars has a crafting profession and I always try to craft things for the character to wear while leveling. But it can slow down leveling significantly because of the extra farming/trainer visiting/AH browsing. It doesn't need to give quite as much exp as questing, half of it would be enough so players who don't want to over-rush feel less punished.
