I think you guys are reading a big much into wording, rather than intent. I think his point was that skinning mainly feeds into leatherworking; while mining directly feeds into blacksmithing, jewelcrafting and engineering; and herbalism feeds into both inscription and alchemy.
I really, really don't think he was saying "niche" to act as if he were "special." Just to explain his view that there is less demand for leather due to the nature of the other professions and he'd like to keep it a less taken profession to compensate for that.
