I don’t really see what they could have done with the Tauren to make plainstriding look any different from running through. Even as npc’s the worgen have always been able to get down on all fours and look pretty frightening when they do so. A Tauren running on two feet wouldn’t look as convincingly fast whereas a Tauren running on four feet would just look like a bull. This would be inappropriate because although the Tauren do look more bestial, they don’t really have animal-like personalities. That’s a key difference between them and the worgen and a good argument for why they wouldn’t get down on their hands and start chasing people.
