What if someone has a deck already crafted that they want to set against the Lich King? Are there rules or ways to play regular decks in that setup?

You're able to use your own constructed decks against the Lich King too, though the challenge may be lowered slightly by doing so.

Your own deck will most likely be more powerful than the ones included, but the heroes and their epic weapons included in the raid are vastly more powerful than what you'd normally have access to, so it kind of evens out. Now once people make custom decks for the included heroes, then things will greatly shift in their favor.
