I guess I'm confused with two of the things you listed for problems
# Default categories are unintuitive - -Most- of it is pretty straightforward
# Can't search for exact item names
Because you can search for exact item names (if it's a green or blue item with "of the monkey" or types like that, just search for the base item, even with gems and stuff you can.
4 of the problems I agree with though

And gems. Looking to buy, say, Inferno Rubies to cut is a big pain when the uncut gems are all mixed in with the cut ones.

He's talking about exact match only. Cloth vs cloth bolts. Cut vs uncut gems etc. The problem is the entire name of something is contained in the name of other things you are searching for and they are in the same category you can't void it at all.

I find that Auctionator handles this problem quite well.
You search for "inferno ruby" and it first lists all search results that match that search. So you'll see "Inferno Ruby", "Delicate Inferno Ruby", "Bold Inferno Ruby", etc. Then you click which one you really wanted to search for. So if you only want the uncut gems, just click on plain "Inferno Ruby". It will then only list those gems, sorted in order of buyout price.
This feature is also useful if you're not sure what gem you want for a slot. Say you want a purple gem, just search for "demonseye". It will then list all available cuts of Demonseye in the first search. You can hover over each to see what bonuses come from each cut. It also lists the lowest price available at this point if you want to factor that into your gem purchase decision. Then just click the cut you want and you'll only see a list of prices for that specific cut.

I'd like to buy 3 Jasper for my JC daily, not a forceful, jagged, lightning, nimble, piercing, puissant, regal, sensei's, steady, or zen jasper.
personally, as it has been mentioned on this site numerous times, Auctionator is probably the best AH addon for the masses. It does most all of what we talk about here, it's very lightweight, and its minimalistic interface makes it easy to approach. If you are casual about the AH, this addon will make you 10x what you would have, and save you that much or more as well simply because of it's ability to search and sort the way you want to buy/sell - by price.

Try wading through the avalanche of Embersilk Cloth when you want just plain old Silk Cloth with the in-game AH menus. At this point in the expansion I am sometimes forced to click through 10-15+ pages before I can get to what I am looking for.
At least they are color coded. I can just keep hitting the button until I see some pink on the screen. :)
