This is a bit off topic, but does anyone know if they are changing some of the achievements for Children's Week? Like all the Dalaran food, or fighting King Ymiron? Thanks! =D

Nope.
They don't change holiday Achievements just because a new expansion comes out. There are still Achievements related to Burning Crusade locations in holidays.

Although, since achievements didn't exist until the pre-Wrath patch, you can't really use that as an argument. ;)
But yeah, in general they don't change an achievement unless content is no longer in the game, not just because it's less convenient.
