The Gilneans got bitten when Arugal was researching for a way to combat the Scourge. He turned to the Book of Ur, written by a Dalaran mage who had found a monstrous race in a "different world."
Arugal found out how to summon these creatures, and it worked well to fight off the Scourge, but then the beasts turned on the Gilnean people and bit them, as they were no longer calmed by the tree. This is where the Gilnean Worgen come from.
