Ive been tryig to get my guild members onto the PTR to do some of this, but our schedules don't really line up with Blizzards. If we log onto the PTR, for example, on Monday at midnight . . . Will there be any bosses available inside the Firelands or will it just be a big empty instance?

Less than that. There likely will not even be a portal to enter the instance.
