That happened to me. The elephant followed me around for days and days until I summoned another vanity pet, and then it vanished. It was most amusing. Not sure if it's a feature or a bug.

Exactly my experience.... It even followed me into dungeons. Everyone was wondering where I got the pet! :D

Def a bug, related I think to the recent change that made vanity pets persist through death/logging. As long as the baby mammoth was the last pet you had out, the game brings it back when you rez, port or log just like it was an actual vanity pet.

I've had a similar experience with the Innkeeper's Daughter. What's odd is that she'll appear by my side at strange times (logging in, entering an instance, after dismounting) when she wasn't there before. But when that happens, she'll die almost instantly. It's actually kind of creepy hearing the female dwarf death sound at random intervals.

Yeah it's a bug. I put in a ticket and was told that if I summoned a pet, that would get rid of it.
It was a relief to find that out since it was a gnome rogue this was following and it was bigger than my toon was.

My Dwarf Shaman had a similar, but just as hilarious problem. After killing Drakuru, every single time I logged in Malmortis (the skeletal majordomo that shows you around the troll-scourging area) would be standing there, explain that the master had been expecting me, and asked me to follow him.
Then he'd just sit there, unless there was a hostile creature nearby. In those cases he'd run over and start punching them.
Malmortis was always there waiting for me, from Zul'Drak through Storm Peaks, then into Vashj'ir and Mount Hyjal. Then, after going to Deepholm, he just stopped showing up. It was rather sad, to be honest.
