For me, it's actually a toss-up between hunters and mages. I honestly don't know what it is about mages that makes me love them so much, but I have three of them, one for each spec, and my fire mage just hit 85 last night. The class is always fun to play, no matter what the spec. Teleporting makes getting around the world easy, and there's something awesome about knowing that if you truly get in trouble, you can call on three of yourself to save your own ass.
As for hunters, I only have two, but I know why I like them so much: the pets. ^_^ Call me crazy, but there's something about having an animal companion at your side all the time that just plain makes the class feel awesome. My Alliance-side hunter is 85, and all his pets except one are named after houses from George R. R. Martin's "A Song of Ice and Fire" series - I have a lion named Lannister, a winged serpent named Targaryen, and so on. I tamed Chromaggus just so I could name the pet Clegane.
...his wolf is named Holo, but anyone who recognizes why will understand.
