I wouldn't make a scribe - unless you really want to have every crafting profession covered. But inscription isn't going to be the strongest moving forward, since darkmoon trinkets will mostly be a thing of the past. Glyphs will see a nice bump in 4.2, and they still provide steady income. But you should work with what you have. Every crafting profession does quite well at the start of a new tier.
JC - Gems of all types will be extremely profitable. If possible, try to amass a large stockpile of inferno rubies. And the way to do THAT is...
Alchemy - Guild cauldrons have made flask mastery a thing of the past. I'm sure there's profit to be made in potions, but I've never explored that market. The key is making Inferno Rubies as a transmute specced alchemist. Truegold prices will rise a lot with new craftables, hopefully you have cheap volatiles on hand.
BS/LW/Tailoring - all of the new PVE and PVP recipes should do quite well.
