You can sort by price per item or price per stack if you run Auctioneer. (I run that and Auctionator side-by-side.) But I assume you're talking about the default interface, and I agree. The whole thing is a clunky mess that could use some serious overhaul. I don't understand how anyone gets buy without using at least one AH addon.
