I'm not entirely certain what you saw, but they do tame their pets when they spawn from time to time. You'll see the pet spawn like a normal mob, and the hunter, and then he'll tame it with hearts being shown. It's pretty much the same as a normal taming of a pet for a hunter, but if you saw something different...
