I was pleasantly surprised by them saving my DK...especially since Taurens in plate aren't light by any stretch of the imagination.

I have to concur with this - doing the Herbninjas of the Talon quests I fell off things/got punted off things/rocks fell apart under me heaps of times. Only time I've been glad to see one of those rancid flapping flower thieves!

Either these people walk around with no UI or they have incredible muscle memory for hitting ALT+Z and then PrtScn.

There's an addon that turns that combo into a sort of macro. You then only have to mash that one button and it takes down the UI for you. Don't ask me what it is, I only saw it in passing.
Although I think multi-shot might do that for you as well.

To add to my comment: SSS not only hides the UI, it hides player/mob/hostile names as well, which Alt+Z does not. The only hitch is that you can't be targeting anything, or it won't fire (I think it's 'cause it can't hide the mob name in that case).

Surely it (or indeed yourself) could just use /cleartarget? Of course, if you're doing a battle screenshot, that may hamper you a little...
