It sounds like you are reading older guides. Since Unholy's mastery was changed from increasing Damage Disease to increasing Shadow Damage it became a more valuable stat, though still not measuring up to haste. The reason it is more valuable than Expertise is because Mastery affects your Blood Plague, Scourge Strike, and Death Coil. Expertise only really affects Scourge Strike, Festering Strike, and occasionally Plague Strike. In effect, Unholy values expertise less than Frost does because less of its damage is based on weapon strikes.

As for crit hate, part of it is due to other stats having a bigger impact on DPS. There are no Unholy talents that have any synergy with critical strikes like a Fire Mage's Hot Streak of a Fury Warrior's Flurry. And part of it is because, quite frankly, Frost appears to be the most popular DK tree by a very wide margin, and the Killing Machine talent devalues crit rating by removing the need for it.
