Recall that there's still a couple of significant limitations to the transmogrifier: you can't transmogrify what you can't wear, and you can't make a piece of armor look like a different armor type.
So if you're running around in T2 Judgment, we may not be able to tell your PvE or PvP progression, but you are still instantly recognizable as a Pally. Likewise, if you're running around in the old Vanilla lvl 60 PvP Alliance plate set, you're certainly not a Mage.
We haven't completely left behind the idea of visual recognition; I think it is still far too early to expect racial silhouettes to stop mattering.
