For the amount of customization you want, I think getting mods would do so much more for you than to complain. Just a couple mods and you can basically rid your entire screen of everything. And I'm not trying to be sarcastic, minimalist looks with only what you need are definitely better UI design than everything everyone might need at any given moment. However, since Blizzard also needs to make it easy to use for the new user while also not cluttering the configuration screen too much, they lean heavily on the mod makers for the rest.
