I think the one way to keep (almost) everyone happy is to have some gear slots that silly items can be changed to and others just for more serious gear. Like the helm, it's completely optional as it is, so Blizzard can't say you're 'hurting the artist's feelings' or anything by changing it's look because a lot of people don't even show it. So for that, no limitations, people don't need to look at your helm to tell if you're wearing plate or cloth, the rest of your gear shows that off pretty well. The other slot that should be more open to change is weapon, keep this one where it has to be right for your class, but otherwise let people have fun. I don't even think the whole stat limitation should be on the weapon tab, just have so if you can equip daggers, and it's classified as a dagger, then you can change your weapon to look like it.
In short: Let us have fun with helms and weapons, be serious on the other slots but still give players some silly, fun time so we're not all just choosing what tier we want to be in.
