The Queue: What am I going to do with all these Green Proto-Drakes?

I am practically swimming in Green Proto-Drakes. I don't even know what to do with them any more! Satchel of Exotic Mysteries, please give me mounts that I don't already have. Worthless bags.

It's the same concept and I don't think one type should be the exception.
I see that you do not play a hunter. That statement is not meant to be mean or belittling in any way, but as the commenters have made note of, it is not about the look of the weapon per se but the sound each makes. Guns in WoW have a very audible sound that cannot be turned off without lowering the sound effects volume (which lowers all sound effects) or using an addon to suppress the gun firing noise. Guns are loud; bows are not. Each time you use an ability -- boom. Each Auto-Shot -- boom. It gets annoying quickly. That is why guns to bows and bows to guns is the exception to the rule.

I do not think you will ever see this happen. There really isn't any reason for it. Old content is old. It's meant to be breezed through so that you get to experience it long after it is relevant. If you want to make a retro raiding guild or something and stop experience gain at 60, you can still do that and only get the armor and weapons available to you at that level. I do not believe Blizzard is interested in devoting resources to making old raids relevant again just for nostalgia's sake -- across the board, at least. Naxxramas, Deadmines, Shadowfang, and the two Zul heroics are the remade exceptions, of course.
With transmogrification, Blizzard is giving players a good enough reason to go back and do old stuff. Old content is by design, for the most part, meant to be easily accessibly and facerolled, not present a current challenge when there are already current challenges available to players in the form of new content. Plus, so many people will be going back and doing this content for old tier gear that you're bound to run into some fun problems along the way that will challenge you.

As of Cataclysm, a lot of the items that I would have said would be the rarest are long gone. Right now, though, I would imagine the rarest possible item to get that is available via trading or whatever is probably the non-soulbound Thistle Tea recipe from pre-patch 1.3 or the Dirge's Kickin' Chimaerok Chops recipe. There are probably rare recipes and items and such out there, but these two recipes are really rare these days and for collectors only.
But, really, the answer is Teebu's Blazing Longsword, because that never dropped, ever. EVER.

While I like the added challenge of hard mode content, I vastly prefer the Sarth 3D model to the binary button you press to swap the encounter to a harder version. Firelands heroics so far have been fun, especially Rhyolith and Shannox, since those are the only two I've completed. We've gotten pretty close on Alysrazor, though, and I hear Majordomo is sort of a pushover.
All in all, I like challenge and I like wiping to and learning new content. However, the binary nature of hard modes is something that I wish would change. It might be me just changing as a player, but I am cool with having beaten Ragnaros on regular. Would I like to see him die on heroic? Sure. Will I lose sleep over it? Nah.

It is indeed AdiBags. I used to use arkinventory, which is nice, but adibags is simpler to use right out of the box. However, arkinventory is much more customizable. I recommend either addon depending on how much you want to mess around with settings.

Probably a silly question - but is there a Lore reason for the big gate that separates Northern Stranglethorn from Westfall? I was going through there today to see if there was anything left at Yojamba Island (there isn't, those Zandalari not only went mean, but they took their huts with them!) and for the first time noticed that big and mostly overgrown gate with ramparts and everything.
Of course, ingame, flying over to inspect the Westfall side there's just bare mountain face, and no indication that gate has an equivalent. Hm.

I think the other side of the gate is the underground Deadmines. How else are they going to get that boat we fight on out of there? :)

I always assumed on the other side of the gate is the boat inside Deadmines, because if I recall there's also a big gate in there.
And since the boat is inside a cave, it makes sense that there's a mountain.

I think what you're referring to is the big gate at the end of the Deadmines instance.
Remember, at the end of Deadmines, you fight on a big ship (inside a big cave). That big gate is the way that the big ship would get out of the cave.
And the Defias planned to take the big ship up the coast north and attack Stormwind with it. (not much of a plan really, but whatever)
If you look around, you can see the other side of the gate in the cave at the end of Deadmines.

As others have said, it's the gate for the harbor in the Deadmines.
Here's another thing for your to ponder. The entire time you go thru the Deadmines, you are going downhill. But at the end, you have a small run up a hill (nowhere near as tall as the actual Deadmines are deep) and when you exit, you end up above the entrance.

I was just studying that gate the other day. I mean, I'd seen it before and had figured out what it was a long time ago, but this time I actually stopped to take a closer look at it. And I realized a few things:
• It's really, really old. It's clearly "human style" construction, but it looks older even than the pre-Cataclysm human stone construction. Which leads me to guess that it dates back to before the First War, or at least before the Second War. (Let's see, SW was destroyed in the Second War, right? And then rebuilt between the Third War and the launch of WoW.) It's style looks more like Stromgarde than Stormwind, which suggests it was built around the same time as the founding of the original Stormwind.
• Due to it's age, it's safe to assume it wasn't built by the Defias just to get their boat out.
So what was the original purpose of that huge gate?
• The mine may have used boats/barges to move the ore out of the mine, since they obviously weren't going to be moving up through that tiny entrance in Moonbrook. Of course, this implies that the mineshaft itself was a natural cavern to begin with; if they just started the digging in Moonbrook, you'd think they would have made it easier to get the ore out that way.
• Alternatively, the mine itself wasn't a natural cavern, but they dug deep and far enough to *find* a natural cavern that happened to be open to the ocean. But they *didn't* use boats/barges to move the ore. Why not? Because that cave opened into Troll Central. They realized that their mine now provided a convenient way for the trolls of STV to sneak into human lands. So perhaps the gate is there not to let boats leave the cavern, *but to keep the trolls out*. Then they dug an alternative exit, which we all know as the current exit from the Deadmines instance.
• And finally, I think it's safe to assume (it may even have been stated in the lore somewhere) that the Defias didn't build that boat from scratch. I'm going to go out on a limb and say that Moonbrook is basically an abandoned mining town, and that the mine itself was pretty much played out. The Defias moved in because it was vacant - I don't remember anything in game stating that they actually killed or drove out the townsfolk. The boat itself is clearly a Horde dreadnaught from WarCraft 2. How did they get it? Who knows. Maybe its sunken wreck was refloated by salvagers, and sold to/stolen by the Defias (or maybe another party), and they realized the abandoned mine at Moonbrook would be a great place to hide it while they refurbished it.
