Here's a good one for Thanksgiving, coming up:Sweet Potato Bread3 cups sugar1/2 cup vegetable oil1/2 cup butter, melted4 eggs3 1/2 cups sifted flour2 teaspoons baking soda1/2 teaspoon salt1/4 teaspoon vanilla1 teaspoon cinnemon1 teaspoon nutmeg2/3 cup water2 cups cooked sweet potato* Preheat oven to 350F* In a large bowl, combine eggs, oil, and melted butter. Beat for 45 seconds. Add eggs, one at a time, beating well after each addition.* Whisk together dry ingredients and add to egg mixture, alternately with water. Stir in sweet potatoes and vanilla.* Transfer batter into 3 buttered and floured loaf pans* Bake at 350F for about 60 minutes or until done.This was a huge hit with my family last year.
