There are two kinds of muscle. Red and White. It depends on their use. Red muscles is the marathon muscle, good for long time functioning. White muscle is for 'burst'. It can not keep up the metabolism of red muscle but is fast and efficient. Beef is Red Muscle: a hemoglobinized aerobic muscle.(White meat) Chicken uses burst energy, anaerobic style. White muscle. Thats because chickens do not fly consistently, just in bursts to move fast.(Dark meat) Chicken is red muscle, as chickens are largely land animals.Duck: They fly heaps, so they're all dark meat (ie red muscle)This is where it gets interesting: Lizards and Aligators: White meat! Thats why it really tastes like 'chicken'Ostrich: Dark (red muscle). Thats why ostrich burgers taste more like beef.But what about Boomkins?????????I hypothesize that a troll boomkin with its lazy saunter and 'berserk' to go fast is more white meat flavored than a hooved bovine Tauren. The wings of a boomkin, do move fast (esp casting moonfire spam) so they might be White meat chicken flavored, but the meaty leg haunches of a tauren are likely Beefier.
