The Night Elves feel like they're at something of a lull in their story (at least, their recent history is nothing super exciting), while other races are piling on the new lore at an incredible rate. As such, though the Night Elves have my favorite lore/history, I don't currently find them the most engaging race. I think the story lines to come are where the real fun is.
Looking to the future, I think I'm most excited about the Forsaken. If this was anything but an MMO, I'd say Sylvanas is headed for a bad end, but she's so popular I suspect she'll be redeemed somehow. I'd also bet on her making a serious power grab for leadership of the Horde. She's clearly the most dangerous of the Horde leaders and is already ignoring Garrosh. Moreover, I think Garrosh is leading by bluster and yelling while relying on a system of leadership left over from Thrall. When push comes to shove, I doubt he could stop Sylvanas usurping his position is she really tried.
MoP has some good potential for Human lore - if Jaina stops being a goody two-shoes all the time and gets mad for once I think she could be a very interesting character to watch. If Jaina started calling for war then that'd also send ripples through the horde because of her relationship with Thrall. Anduin Wrynn also has great potential, though I'm worried someone will have Varian assassinated in front of Anduin, setting him down the path Varian ended up on. As Anduin gains prominence, having the future king of Stormwind be the voice for peace while Jaina calls for war would also shake up that whole dynamic in interesting ways.
Somewhere down the line I also want blizz to bring back Maiev - she's my favorite character in WoW lore. Since blizz has expressed interest in bringing back Illidan, I suspect she'll reappear at the same time. My guess is that Tyrande will find some way to resurrect Illidan and he'll be on our side. Maiev, incensed at this and still angry over Tyrande's betrayal of the Sentinels, will then attempt a coup d'etat. The coup will fail, but Maiev will then join up with whoever the big bad of the expansion is and lead forces against the Night Elves, ultimately making her a raid boss. Queue epic showdown between Illidan and Maiev: Round 2.

Seen the latest book? She's gone down the "anyone who disagrees with Malfurion and/or Thrall is crazy and will become a future raid boss" path.
