While I won't go as far as to call it sexist, I agree with not making Jaina the grounding influence for Varian, if only to avoid some hackneyed romance subplot from popping up in the future. The bitter and jaded curmudgeon that makes me the perfect Death Knight knows that eventually someone put in charge of writing their storyline would be lazy enough to do it.
I'd nominate Genn to be the level-headed balance to Varian. He is a more experienced ruler, historically just as (if not more) stubborn and short-tempered than Varian is. But following the construction of the Greymane Wall, he had to deal with Crowley's rebellion, the Worgen Curse, the Forsaken invasion, and the death of his only son. Even as old as he is, he's spry enough to kick ass when the need arises, and when the need does not arise he can calm down Varian with a combination of elder wisdom, tough love, and the fact that he's a giant werewolf.
