I would say most tanks no longer find tanking fun. Our guild main tank that has been tanking for years even prefers to dps most fights now, or just sit out and let the other tanks do it. The main thing he has left to find interesting now is where stacking resist trinkets can remove encounter mechanics.
FL had some interesting tanking fights, but DS pretty much does not. Hopefully MoP will be better this way, but Blizz needs to figure out how to provide interesting tanking mechanics they can remove for raid finder. At this point, most of what's been removed for LFR is to make it easier for dps not to die, and for healers to have to do nothing.
Back in Wrath, there were lots of interesting tanking fights (almost every fight in every tier in wrath, starting with Anub in Naxx all the way through LK in ICC). The first two tiers of Cata had some, so we can only hope that this is not a longterm trend caused by LFR.
