I miss the profession quests. They made secondary professions feel like an important part of my character, because I had to prove my skills in the field. I didn't just level up my First Aid by making bandages, I saved the lives of wounded soldiers. The quests still exist, but the rewards (especially for "Triage") are unimpressive.On the same note, I think that crafting top-of-the-line gear should require more than a lucky recipe drop. The Black Anvil, and to a lesser extent, the Mana Loom implemented this well. I know Blizzard is trying to get rid of arbitrary limitations, and requiring crafters to work from a specific location certainly seems arbitrary. However, these restrictions also give a sense of involvement and progression, like you really had to earn your place as a top craftsman.
