I have to argue against the idea that Death Knights are not good companions; a smart Knight, in fact, will place a higher priority on your well-being than his own. Have an unwelcome guest violating your personal space? A Death Knight will be quick to yank the offender away and put them in their place. Strayed into the fire and taken a beating? A Death Knight can have you back on your feet in a heartbeat. And when the chips are down, a Death Knight can call on some friends to cover your escape. Their penchant for self-healing is actually great for a Priest, as you don't feel like have to babysit them; no one wants to date Leeroy Jenkins. If anything, the only drawbacks to spending time with a Death Knight is how cold and distant some of them can be; they can wear that frost-covered armor for so long that it can start to feel like a second skin, and they'll never feel like taking it off and opening up.
