Also, I recommend that you pick up Wolfheart. Varian gets his dark half under control, and he also had the opportunity to kill Garrosh but held back because the charge to kill him would likely have led to numerous deaths in the Ashenvale defenders. So I think his standing with the Alliance leaders is at an alltime high.

Finally if you bother to pay attention, Varian is always coldly in control when he faced down Garrosh (his smile of "he's mine" in Dalaran), whereas Garrosh is the one that goes berserk.
