The Blood Elves were being wiped out, with no aid from an Alliance who actually took advantage of their countries weakened state to imprison their leader when he took steps to rectify this situation, until Sylvanas and the Forsaken offered to help them. The Tauren were likewise saved by the Horde, a group who they have deep cultural similarities with and whose first action upon encountering them was to protect them from extinction at the hands of the centaur a cause with no benefit other than the idea that genocide is wrong. Compare this with the Alliance, who consist of a bunch of pseudo christian white guys currently lobbing huge spears at the gate near the camp they burned down and the Night Elves, who stood in their forest right next to the Barrens, within spitting distance of the besieged Tauren and did nothing. Which is why neither faction is likely to leave the Horde or join the Alliance.
