As a hunter who is in the beta, I can tell you this: We don't know yet.
Currently, pet talent trees do not exist in the beta in any form. The entire "pet talent" tab is gone from the talent pane. On my copied 85, my pets have the same abilities that they had on Live, but there is no way for me to change them. There is also no way to change if the pet is Ferocity, Cunning or Tenacity, which was a suggested feature for Mists.
It's highly likely that pet talents are still a work in progress and we'll have to wait for future beta patches to learn more. For now, we don't know what is going to happen.
